      <image:caption>One of my goals this year is to make more recipes. I’m a boring eater…it makes it easier to buy groceries and easier to track my macros. I have the staple foods I eat for most meals and usually the only things that change are the vegetables or fruits I eat with them. I’m a creature of habit you could say. But, I’m really going to try to start branching out a bit so I can share some healthy and tasty recipes with you! Tonight on the menu, I tried making Thai chicken lettuce wraps for the first time and let me tell you…they did not disappoint. Super easy ingredients, quick to make and the flavor was amazing! Plus, they’re macro friendly which is what we’re aiming for here. Here’s what you’ll need: For the sauce:  2 TBL Thai sweet chili sauce 1 tsp honey 1/4 cup of low sodium soy sauce or coconut aminos The juice of 1 lime. For the mixture itself you’ll need: 1 TBL sesame oil 35g of diced onion 2 tsp of garlic 3 tsp ginger paste 1 lb of ground chicken 1/4 cup of scallions chopped 1/4 cup cilantro chopped 50g of raw carrots sliced into thin strips 1/4 cup of peanuts (crushed) 1 head of butter lettuce (leaves removed and rinsed)   Start with 1 TBL of sesame oil in your pan. Once the oil it hot, add your diced onion and cook until onions start to brown and turn translucent. Add in your garlic and ginger and toss that around in your pan for about 2 minutes. Then, add in your ground chicken. Use a spatula to break it up while its cooking and cook until there is no longer any pink. Once the chicken is cooked, sprinkle your ground up peanuts on top and then add your sauce mixture. Stir that around, reduce heat to simmer and let let it cook for another 2 minutes. Then add in your carrots,  scallions and cilantro. Stir mixture and let simmer for another minute or so. Once thats done, you can assemble your lettuce wraps! I just used a small spoon to layer the chicken mixture down the middle of the lettuce leaf and ate them like tacos. YUM. You can also cook some rice and eat this mixture over a bed of rice if you want to increase your carb intake a bit. You could also add some strips of bell peppers to bulk them up and give them some extra crunch! If you divide this recipe into 4 servings, the macros per serving are: 26.2g of protein 12.3g of fat 12.8g of carbs **I did not weigh out my cilantro or lettuce for these macros (they’re so minimal I didn’t bother!).       <image:caption>Directions: Preheat oven to 400F and line your baking sheet with tin foil or parchment paper. After the last close call I had with my parchment paper catching on fire, Im sticking with tin foil.   If you have whole sweet potatoes, you’ll want to wash them and diced them into little cubes. Trader Joe’s came in like they gangster they are and are selling a huge tub for Thanksgiving right now, already washed and diced. God I love them.   Wash and slice up your brussels sprouts too. Then, put brussels sprouts and sweet potatoes on your pain, spray with a little non stick spray (I used avocado oil), sprinkle with sea salt and garlic powder and then put in your oven for 20 minutes.   While your veggies are cooking, slice up your chicken sausage (It should already come cooked) and put it in a skillet with some non stick spray to brown and warm it. Remove from pan and set aside. Then add your 1-2 tsp of sesame oil and let it warm up. Add in your riced cauliflower, 1/4 cup of water or bone broth and stir. I let this cook on the stove top for about 5-10 minutes, I just turned it down really low because I didn’t want it done with a lot of time left on my veggies.   Once your veggies are done, start building your bowl! I started with the riced cauliflower, then added my sausage, brussels sprouts and sweet potatoes. Finished it off by drizzling with spicy cashew butter dressing and voila! A super easy, nutrient dense, dinner in under 25 minutes from start to finish.   Macros for this entire bowl: 50.1 carbs 14.8 fat 25.9 protein   **This bowl is super versatile because you can change it up by using different dressing for your drizzle on top, using a different flavor chicken sausage, adding in rice vs. the cauliflower rice. Lots of different options here for your different needs. ENJOY!</image:caption>

Next, in a magic bullet blender or any smaller hand held blender you have, combine: 1/2 cup (42 grams) of dried oats (I just used old fashioned oats) 1/2 (50 grams) banana (I had some bananas that were on their last leg…super spotty and brown. The more ripe, the sweeter your oats will be) 1 egg 1/4 cup of milk, milk alternative ( I actually used Premiere protein since I was drinking one when I made this) 1/4 tsp of baking powder sprinkle of cinnamon ( I like a lot so I put a heavy sprinkle) 1 tsp cocoa powder ( this is optional if you want it chocolate or not. You could sub this for vanilla or almond extract instead) 1 TBL of maple syrup (I used SF maple syrup) Pinch of salt Blend all of the ingredients together and then pour into a small greased baking dish. I used a small glass tupperware container I have! Once in your dish, you can top with whatever toppings you want! I used 7 grams of mini chocolate chips and 20 grams of fresh raspberries. That’s 173 weeks to be exact. Of course, there were breaks here and there; a week off to enjoy vacation or a special occasion with an untracked meal. But, I truly did have Mallory of Flex Fuel as a coach for the entire journey.  Some people ask me why. I sometimes even wonder this myself. As a well-educated woman, an educator with a Masters, and now someone who also has been certified in health, nutrition, confidence, and mindset coaching, did I really NEED a nutrition coach? For me the answer was easy. Yes.  You see, I first used Flex Fuel to help me lose weight. Well, really, it wasn’t even about weight as much as it was about health. I would run up my stairs in my house and my heart would beat out of my chest. I was a former high school cheerleader and a current barre instructor and had the mindset that I could outrun my fork. The problem was, I disliked running…or any real form of exercise! I also am not the 18 year old I once was, in fact, far from it! I’m a mom of two. (15 and 13 years old. Both were born via c-sections. Both are very active with ballet and baseball.) I’m a wife of an executive director at a local school. I teach 550 K-2 students. And, now, I also run my own business along side my sister. If there was an excuse, I’m sure over the past 20 years, I have used it.  Then, something changed. I went to a Flex Fuel seminar and knew the macro lifestyle was just what I needed. I also went to a naturopath and had a complete bloodwork-up done, which found I had 5 times the amount of testosterone in my body than any woman should have and my adrenal glands were basically sleeping! I started my health journey telling Mallory my new “findings” and she worked with all of it making sure I would stay “hormone healthy!”  Changes began to happen. I remember doing the happy dance the first time I saw my “rib dimples!” (Something I hadn’t seen since high school!) There were days and times getting my macro numbers to fit was downright exhausting. There were moments that I cried or stressed out over the process. But, I stuck with it. As I kept going, it got better. As I kept going, I learned to give myself grace. I may have even lived the “If It Fits My Macros” lifestyle a bit, but it was far healthier than the burger, fries, and milkshakes I was use to. Don’t get me wrong, I have never given up eating those foods, or ice cream, pizza, and alcohol for that matter. However, when you have to make it “fit,” you can’t overdo it! I enjoy ALL foods, just within reason! My kids never thought I was on a “diet,” but they did learn all about macros, eating enough protein, and my “Mallory homework!”  Could I have stopped 6 months into it? A year? Two years? Yes, but I saw the value in it. I learned I am my biggest and best investment. Not only my health and physical well-being, but my mental, spiritual, and emotional well-being as well. As my health was improving over the past three years, I have transformed into the best version of myself. I carry myself with more confidence. I have shifted my priorities. I have better control of my temper and emotions. I even read the entire Bible!  I chose to keep working with Mallory because I believe she is invaluable! There is something so empowering about being held accountable, but also knowing you have a supporter along the way! I look forward to being a “macro-counter” for the rest of my life! She took some time off and came back to Flex Fuel to have us help her dial things back in. Anytime someone signs up with us, we have them fill out a client intake form so we can get a really clear idea on what they’re looking for, what the goals are, and who they are as a person. When Tarah signed back up, her main going was to feel better! She wanted to improve her sleep, her skin, her body aches and pains and get her cholesterol down. In her time with me, we focused on finding the right ratio of protein, carbohydrates and fats to help support your busy lifestyle (she’s highly active in workouts AND we all know chasing around two kiddos keeps you very busy as well!). She was breastfeeding as well so making sure that she was able to keep milk supply healthy was another important factor. At no point in her time with me did we have to take her into a huge deficit to get her these results. Consistency from day to day with nutrition, water, and workouts is what really fueled her progress. When we can change old beliefs of needing to be skinnier, smaller, take up less space to being strong, bold, beautiful women, its an amazing thing! Bridget sent me this side by side yesterday saying how good she felt and and I knew I wanted to share what she said to me. I’ve been working with Bridget for a little under 4 months (yep, not a ton of time and its not always that fast for most people) and her progress is obvious. Everyone is different and the rate of your progress will be different BUT if you stay consistent, you’ll get there. I never want to promise a quick fix or extreme results because true progress sometimes just takes more time. Bridget is always very consistent with her macros, ending her days within a couple of grams of her targets. She stays on top of her workouts and is very clear and detailed with her check ins each week. If hunger is higher? She tells me. If energy levels have shifted? She tells me. This is because dieting to lose weight shouldn’t be you battling your hunger, energy, cravings every single day. It’s about finding the right balance of intake to help support you while getting results. Sure, there are going to be hunger cues when you’re eating in a deficit but if it’s something that is persistent and harder to ignore as time goes on, it’s usually a sign that we need to bump up intake a bit or add in a refeed day. Of course, for the best results and to be the HEALTHIEST, you choose quality foods.  I’ve made it a daily goal to get as much fiber as possible, which has really helped! (Thanks, Andrea!)  Now when I have a special occasion to go to (bday parties/work parties/date nights), I can fit that into my macros for the day and not feel bad about it.  I’ve also noticed my body doesn’t have as much of a negative reaction as it used to when I eat foods that have more sodium/sugar/etc in them. It does take a little more work to calculate your foods every day in MyFitnessPal, but really only initially.  It’s a little bit like Tetris! I like to keep things as simple as possible, so I end up eating almost the same thing every day, knowing I can change it up at any time. You can save any meal you make, and it becomes a one-click process to add that meal to your day.  Plus, you LEARN about what’s in the food you eat! Now that I’ve achieved a level of leanness that I’m happy with, I am focused on performance – and it’s already paying off! How did you tackle that challenge?  “At first I struggled with eating enough. I was more focused on my new baby that often times I would forget to eat or simply didn’t have the time or energy. I remember being so discouraged when my pre-pregnancy pants didn’t fit, I literally broke down into tears. We have practiced clean eating, Paleo, gluten free, and macro counting, all with results but nothing that was long term. We would readily participate in a nutrition challenge or Whole30, but after would go right back to over indulging and having “cheat days” pretty frequently. I was showing up, doing the work, and still not seeing what I felt like I was working so hard for. I wanted to look as strong and fit as I felt, but my nutrition was not matching up.  A few good friends at my gym (@crossfitbrave) had some great success with macro counting, so I researched some places and decided Flex Fuel would be a good place to start. From day one Mallory has completely “gotten” me. I was able to tell her what I wanted and how I just wanted to look and feel better. So, she developed a plan that got it done!! At first I was BLOWN AWAY by how much I could eat! I couldn’t believe it! I had always thought that results meant sacrifice. That if I wanted those abs or that definition, it meant I had to eat chicken and broccoli and nothing else. And I was so, so wrong!! I am no where near where I would like to be, but I am SO much closer than before. Since starting I have lost about 18 Lbs, and even on a cut, PR’d 4 lifts and 3 benchmark workouts.
