Gluten Free Pasta Salad

What you need for 2 servings:

2 oz Barilla Red Lentil Pasta

6 Romaine lettuce leaves, chopped ( lettuce is so minimal in terms of macros, just eyeball how much you want)

3 oz of orange bell pepper, chopped

7 cherry tomatoes, halved

2 oz red onion, chopped

1.5 oz  broccoli florets, chopped

50 grams of black olives, sliced

28 grams of Feta cheese, crumbled

15 slices of turkey pepperoni (I cut mine in quarters)

3 TBL of LiteHouse Italian Dressing

Directions:

Boil water and cook your pasta. While that is cooking, chop all other ingredients and add to a big bowl. Once pasta is cooked, add that along with your Italian dressing and toss until everything is coated. You can add a little garlic salt and pepper for taste. Enjoy!!!

30.8 Carbs

13.5 fat

15.2 Protein

 

You could bulk up the protein content by adding shredded chicken or whatever meat you choose. You can also lower the fat content but using a light salad dressing or low fat feta cheese. I chose to use the full fat versions for this particular recipe.
